The food concept of SUIDEN TERRASSE is “Farm to Table — a restaurant connected to the agriculture of Shonai, Yamagata”.
We are not farmers ourselves, but we hold to this concept out of a wish to be a place connected, through every season, to the rich agriculture of Shonai.
By “agriculture” we mean the cycle of food itself, turning ceaselessly with the seasons.
Shonai is home to a great variety of ingredients raised by the sea, the mountains, the rivers and the plain — and to the producers and food professionals who make the most of them. We select those ingredients with care and deliver their appeal together with our cooking.

“One day I want to cook in Shonai, my home, blessed with wonderful ingredients and food culture.”
With that wish, he studied at a culinary school in Tokyo, built his experience at leading hotels, and has now returned to face cooking in this place once more.
SUIDEN TERRASSE aims to be a place that connects the region and our guests — free of genre, centred on the appeal of ingredients raised by the nature of Shonai and on its remarkable food culture.
Breakfast brings the seasonal local dishes of Shonai; dinner takes “water and rice” as its theme, reflecting on the plate a cycle in which snowmelt moistens the earth, raises the rice, brews the sake, and at last flows to the sea to feed the fish.

Each month we serve a buffet-style Japanese menu in which more than 80% of the dishes use ingredients from Shonai. Enjoy a table filled with the home-style dishes and rice that the people of Shonai eat both every day and on special occasions.

Facing “water and rice”, the essence of Shonai
A jewel of a plate, drawn from this landscape
Taking “water and rice” — the root of Shonai's food culture — as the concept for dinner, we bring together ingredients that represent the region: the ultra-soft water of the Takenotsuyu brewery, rice from Dewa Yahei grown with uncompromising methods, and seasonal fish landed on the Shonai coast. Each dish is composed so that you can taste the story of water and rice.
All three courses include an amuse made with Shonai rice, Tsuyahime bread, and a Tsuyahime rice ball to finish (the 12,000 yen course is served with a rock-nori rice ball), as well as dashi taken from local fish.
Through “water and rice” and the ingredients of each season, please enjoy with all five senses the gifts that only Shonai can offer.
